In Indonesian Pasti Enak means "truly delicious. The PT Pasti Enak
company truly does produce delicious food products including our pure
palm syrup that is carefully produced to insure great flavor.
To produce our palm
syrup we harvest organic sap from sugar palms and reduce the sap to form
a thick syrup. Constant supervision and care is required though the
process to insure a consistent and high quality end product.
Contrary
to what many people think palm syrup from Indonesian sugar palms should be a light golden
color not dark. Darkening occurs when sugars in the sap caramelize and
thus if the color is over dark it is a sign of over caramelization which
results in bitterness.
Our palm syrup is characterized by a golden color with rich palm
flavor, similar to maple syrup.
Other names for palm syrup include, Miel de palma, palm honey, guarapo,
gula merah, and gula palm.

On the slopes of mountain Agung in Bali Indonesia villagers harvest sap
from palm flowers. This palm sap is source of palm sugar and palm wine.
Palm sap is harvested twice a day by individually climbing the palm tree
and changing out a bucket that catches the sap. This is a very
dangerous, time consuming and exhausting job as most of these trees are
over 10 meters tall. Once the sap is harvested from the tree it needs to
be immediately cooked if palm sugar is the desired final product. If the
sap is not cooked fermentation starts and within hours it will start
turning into palm wine which is called Tuak in Indonesia.
Tuak is a semi strong drink with an alcohol content between 1 and 10.
Tuak is not commercially packaged and is usually just placed in recycled
plastic water bottles. If the Tuak is not consumed within 2 days it
becomes very sour as it turns to vinegar.
Cooking of palm sap into palm syrup take up to 10 hours this lengthy
process reduces the volume of the sap by up to 95%. The result of the
reduction is a golden syrup that we call palm syrup. The most common
form of palm sugar is crystallized similar to brown sugar found in the
west. Palm Sugar is usually sold in round or semi sphere blocks.
There are a few companies in Indonesia making palm syrup but it is
common for these products to be substantially cut with caramelized cane
sugar, vanilla, and other natural flavorings. Although many of these
products taste good we believe that the all natural palm syrup that we
produce has flavor characteristics that are completely different and
unique. The drawback to a pure palm syrup is that it is quite costly.
I believe that pure palm syrup is the closest natural flavor to maple
syrup that I have experiences. When this is taken into consideration the
cost is quite reasonable as it is around one quarter of the price of
maple syrup.

of 75% maple syrup mixed with 25% molasses will work in most recipes.
